Turkey, Spinach, and Cheese Panini

Are you wondering what to do with all the Thanksgiving leftovers in the refrigerator right now? This is a great time of year for a Turkey, Spinach, and Cheese Panini. Paninis are grilled Italian sandwiches. They became popular in the 1970s and 1980s in Italy. Typically, Paninis are made on bread rolls like ciabatta. However, in America the name Panini is given to any warm grilled sandwich and we typically use sliced bread. It doesn’t take long to start dreaming about all the possible combinations. We can make a Panini with just about anything we have on hand. 

Turkey, Spinach and Cheese Panini
2 slices of good quality sandwich bread
1 handful of baby spinach leaves
3 oz of leftover turkey, torn into bite sized pieces
1 to 2 oz of cheese (Swiss, Colby, muenster, or whatever you have on hand—I used mild cheddar)
2 Tablespoons of mayonnaise, divided
1 Tablespoon of cranberry sauce
1 teaspoon of yellow mustard or Dijon (I’m a huge fan of simple yellow mustard)
soft butter

Gather all your ingredients.

Mix 1 tablespoon of mayonnaise and 1 teaspoon of yellow mustard.

Spread the mayonnaise and mustard mixture on one side of a piece of bread.

Pile the torn turkey on top of the mayonnaise and mustard mixture.

Place the spinach leaves on top of the turkey.

Cover the spinach with the cheese slices.

Mix the remaining mayonnaise with the cranberry sauce.

Spread the mayonnaise and cranberry mixture on one side of the other piece of bread.

Butter the outside of both sides of the sandwich.

Place sandwich in a panini press, George Foreman grill, grill pan, or frying pan.  I used my George Foreman grill and my sandwich was ready in four minutes.

Cut the sandwich diagonally and serve.
