Turkey and Lettuce Roll-Ups

This is one of my favorite snacks or sometimes I make more and have them for lunch. Butter lettuce is easy to buy in plastic containers. I can keep a couple of these containers in the fridge and they last awhile because the roots are still intact. Butter lettuce is a great vehicle to serve up some protein without using bread or tortillas. Add a smear of store-bought hummus, a slice of turkey lunch meat, and it’s snack time! The following serves 2 people 3 roll-ups each as a snack, or 1 person all 6 as a lunch.

Turkey Roll-Ups
6 butter lettuce leaves
3 scallions, trimmed, cut in half to make 6 long pieces and cut in half again to make 12 pieces
6 tablespoons of store-bought hummus, preferable organic
6 thin slices of turkey breast, look for no sugar and no nitrates.
(Note: I have also used leftover rotisserie chicken and turkey breast which is also very good)

1. Cut scallions in half to make 6 long pieces and cut in half again to make 12 short pieces.

2. Spread a dollop of hummus on a lettuce leaf, cover with a slice of turkey, and top with 2 scallion pieces.

3. Secure with toothpick.
