Mom’s salmon patties were an ingenious method for her to get us kids to eat more fish, I’m sure. We always ate them without complaint, albeit with ketchup. I imagine my mom used this as fast weeknight dinner she could make with ingredients she kept in the pantry. I haven’t had these in years but found myself craving them lately. It’s funny how that happens. Meals that were a staple growing up are now part of a stable of recipes that I periodically crave. Is that nostalgia? Is that good home cooking? Or, both. A phone call to my Mom produced the following recipe.
Mom’s Salmon Patties
2 (15 oz) cans of salmon
1 small onion
1 egg
1/4 cup bread crumbs (regular or gluten free)
olive oil
- Open two cans of salmon and remove any unwanted bones and skin. Place all ingredients in a mixing bowl.
2. Form into medium size patties—approximately four patties per can. If the mixture is too dry add a splash of milk (almond, coconut, or cow).
3. Heat a few tablespoons of oil in a frying pan and place first batch of patties in a the frying pan. When sufficiently browned on one side, about 5 to 6 minutes, flip and finishing browning the second side.
4. Keep first batch in a warm oven while cooking the second batch. Serve with Mom’s Fried Potatoes, Roasted Asparagus, a cucumber salad, or all of it!
