Spinach salad with leftover turkey coupled with pomegranate seeds is the cure after a couple of days of Thanksgiving leftovers. Soon after the big turkey day, I want a salad. I crave salad. I need a salad. This is a colorful and refreshing concoction items that might be in your refrigerator. Salad combinations are only restricted by our imaginations. When we make our salads as colorful as possible we make them more nutritious. In this case, the pomegranate seeds offer many health benefits with fun pop of acidity.
Spinach Salad with Turkey and Pomegranate Seeds
3 oz of baby spinach leaves
3 oz leftover turkey, torn
fresh seeds from 1/4 of a pomegranate
2 to 3 tablespoons of your favorite ranch dressing (or Homemade Ranch )
red onions to taste
fresh cracked pepper to taste (optional)
Gather all the ingredients into one place.
In a medium sized bowl toss spinach leaves with ranch dressing.
Add torn turkey and red onions.
Squeeze 1/4 of a pomegranate into a bowl or dish. Gently tap the pomegranate against the bowl, if necessary.
Add seeds, cracked pepper if desired, and dig in. I think this salad looks like Christmas.
