Simple Strawberry-Vanilla Overnight Oats are an easy make-ahead breakfast with fiber, protein, and creamy texture. With just a few ingredients and a handful of 1/2-pint jars, you can prep grab-and-go breakfasts, afternoon snacks, or even a lightly sweet dessert for the week ahead.
I tested several versions with different ratios of oats, milk, and chia seeds before landing on this one. The result is creamy and satisfying without becoming overly thick or pudding-like. The oats absorb just enough liquid to soften beautifully while still maintaining texture.
Are Overnight Oats Actually Good for You
Oats are a nutrient-dense whole grain rich in manganese, vitamin B1, and fiber. They’re especially known for beta-glucan, a type of soluble fiber that has been studied for its role in supporting healthy cholesterol and balanced blood sugar levels.
According to research discussed by Sarah Ballantyne, beta-glucan may be even more available in raw oats, making overnight oats a nourishing option for busy mornings.
A serving of oats is 1/4 cup measured raw and dry, which translates to 1/2 cup cooked—and that will give you 4.1 grams of fiber, 3% to 9% of which beta-glucan (and up to 26% if eaten raw, as in muesli or overnight oats). This high concentration of beta-glucan appears to be the “magic ingredient” behind oats’ most famous properties, including their cholesterol- and blood sugar-lowering effects.

Why Strawberries Work So Well in Overnight Oats
Strawberries add natural sweetness and brightness to overnight oats without needing much added sugar. They’re also rich in vitamin C and antioxidants, which pair well with the fiber and healthy fats from oats and chia seeds. Vanilla helps round out the flavor, giving these oats a simple strawberries-and-cream feel.
Ingredients (Per Jar)
You can make just a few jars for yourself or several for the whole family. All you need is 1 cup containers.
For each container:
- 1/4 cup rolled oats (be sure it’s labeled gluten-free, if needed)
- 2 teaspoons chia seeds
- 1/4 cup chopped strawberries
- 1/2 cup milk (of choice)
- 1/2 teaspoon vanilla
Dice strawberries. Measure out the dry ingredients and place in as many jars as you want to make. Add 1/4 cup of diced strawberries.

Add vanilla to milk. Pour wet ingredients into dry ingredients and stir thoroughly.

Refrigerate overnight and enjoy with a couple of hard boiled eggs for breakfast. Or, eat as a pre-work out snack or after dinner for dessert.

PRO TIP: The oats will continue to soften overnight. If you prefer a thinner consistency, stir in an extra splash of milk before serving or reduce the amount of chia seeds.

Ingredients
- 1/4 cup oats rolled
- 2 teaspoons chia seeds
- 1/4 cup strawberries small dice
- 1/2 cup milk of choice
- 1/2 teaspoon vanilla
Instructions
- Measure 1/4 cup of rolled oats and 2 teaspoons of chia seeds into a 1/2 pint jar.
- Top oatmeal and chia mixture with 1/4 cup of diced strawberries.
- Add 1/2 teaspoon of vanilla to 1/2 cup of milk, stir, and pour over the oats. Stir the wet and dry ingredients together. Mix well, cover, and refrigerate overnight.
