Roasted Broccoli with Lemon-Garlic Gremolata

We all know that broccoli is good for us. Why exactly? It provides vitamin K, vitamin C, a variety of B vitamins, calcium, potassium, loads of amino acids, and fiber. Not to mention broccoli contains cancer-fighting antioxidants and feeds your gut microbiome.  Until recently, I’ve typically steamed my broccoli. If you’ve never roasted broccoli, let me tell you, it’s a revelation! It’s an easy side for a week night meal. Just pop florets drizzled with olive oil into the oven for 12 minutes and enjoy the roasted, slightly crunchy texture. No more overcooked mushy broccoli! Plus, it does your body good.

Roasted Broccoli with Lemon-Garlic Gremolata
2 crowns of broccoli, cut into florets
olive oil
salt
pepper (omit for AIP)

For the Gremolata
1/4 cup loosely packed fresh parsley leaves
2 cloves of finely chopped garlic
zest of 1 lemon
juice of 1/2 lemon

1. Preheat oven to 400 degrees. Cut two crowns of broccoli into florets and spread evenly over a parchment-lined sheet pan.

2. Drizzle with enough olive oil to lightly coat all of the florets. Toss with your hands and sprinkle with salt and pepper. Place in the oven and bake for 12 to 15 minutes or until desired doneness.

3. While the broccoli is baking, prepare the gremolata. Chop the parsley and garlic, zest the lemon and set aside in bowl.

5. When broccoli is done squeeze the juice of half a lemon and sprinkle with gremolata.

  • I love broccoli, but sometimes it has that weird smell – not with this dish. Maybe it’s the lemon and/or garlic or something but the smell (and the taste) of this dish is great! What a great and simple combo. YUM!

    • Debbie, I know exactly what you mean. I think it has something to do with roasting too. Yeah, lemon and garlic on veggies is great. But, all vegetables taste a little sweeter when they are roasted. So that’s the first thing I recommend to people having trouble eating vegetables. Roast them!
