Broiled Flank or Skirt Steak

Guess what? You don’t need a barbecue to make delicious flank steak or skirt steak. All you need is a clean oven heated to the broiler setting. The clean oven tip is from a cautionary tale. Since, an oven on broil gets to 500 degrees, and it can set off your smoke detector if your oven is not clean. Therefore, make sure your oven is pretty clean. I don’t want to scare you off from making broiled meat. Once you try it, you’ll make it part of your regular rotation. Broiled Flank Steak or Skirt Steak is a greet weeknight dinner because you can have it on the table in twenty minutes, it’s satiating, nutritious, and a great source of protein.

What is the difference between flank steak and skirt steak?

Flank steak and skirt steak both come from the under belly of the cow. So, they are similar and can be used interchangeably in most recipes. Flank steak tends to be thicker and skirt steak has a slightly beefier flavor and cooks a little quicker.

Oven-Broiled Flank or Skirt Steak
1 flank steak or skirt steak, cut in half if necessary
1/3 teaspoon kosher salt
1/3 teaspoon course black pepper (omit for AIP)
1/3 teaspoon granulated garlic

Heat the oven to a 500 degrees broil and place wire rack on the top position. (Note: be sure you have a clean oven. If your oven is overly dirty, this may cause smoke and you’re smoke detectors to go off.) Stab the flank steak front and back with a fork several times, and sprinkle lightly with Adolf’s (gasp—yes, I still use this for a couple of items). Arrange steak on a foiled lined half sheet pan with a wire rack.

Mix salt, pepper, and garlic in a small prep dish. Sprinkle 1/2 the mixture.on one side of flank steak, and place under the broiler (3 minutes for skirt steak and 5 minutes for flank steak). Stay close and watch carefully. Broil time depends greatly on the thickness of the steak.

Broil 3 to 5 minutes on side one.

After 3 to 5 minutes on the first side, flip the steak over, sprinkle with remaining seasoning and broil another 3 to 5 minutes to your liking.

Pull the steak out, place on a cutting board, cover with tin foil, and let rest for another 5 to 7 minutes. This is an important step, otherwise the juice will end up on the cutting board instead of inside the meat.

Slice thinly against the grain.

Serve with potatoes (for a meat and potatoes dish); serve with scrambled eggs and salsa (for a brunch or breakfast for dinner); or serve with fajita fixings.
