Can you make pesto without cheese? Yes! The last time I went to the store they had large tubs of basil and I couldn’t resist. The weather is good enough to grill now and basil screams summer to me. I love pesto with pasta, of course, but it also adds so much flavor to grilled chicken, fish, veggies, and even in scrambled eggs. Pine nuts are not required either. Almonds, walnuts, pumpkin seeds, and pistachios could be substituted.
Basil Pesto (Dairy Free)
1 cup pine nuts
4 cups basil
4 cloves of garlic
1 cup quality extra virgin olive oil
1) Place pine nuts into the food processor.
2) Add basil and garlic.
3) Blend until smooth and place in serving dish.
