Arugula Walnut Pesto

Sometimes you just need a sauce to take an ordinary dish to an extraordinary dish. Arugula walnut pesto is a universal sauce that can be used on roasted vegetables, grilled chicken, sauteed fish, scrambled eggs, and pasta. Not only does it taste delicious but it’s good for you. Arugula has a lovely peppery taste, contains vitamin A, and is a good source of fiber. Walnuts are a good source of phosphorus and potassium. Olive oil is loaded with polyphenols which act as an antioxidant, helps prevent cell damage, and is anti-inflammatory. A batch of this pesto lasts a week or more and serves as a great condiment to many dishes. It’s a great way to add healthy nutrition to meals without “eating a vegetable” which might work for the picky eaters in your life!

Arugula Walnut Pesto
1 cup walnuts
4 oz of arugula
1 cup of quality extra-virgin olive oil

1. Place walnuts in the food processor and top with the arugula.

2. Add olive oil and pulse until you have pesto.

3. Serve with chicken, wild cod, scrambled eggs, and more.
