I have been making this recipe for years, roughly since the early 2000’s when one night I contemplated and savored what I loved about Boston Market’s green beans (which now appears only on the catering menu). So, now you can make them at home. I’ve made this recipe about once a week for years. It’s so simple I didn’t think about writing about it until several people asked me for the recipe after making these for a Christmas dinner (for 60 people). I’ve never been texted and emailed so many times for a recipe. The beautiful thing is that this side dish can be ready in 10 minutes if you start with frozen (thawed) green beans. Otherwise, it will take an extra time to cook the green beans from frozen or extra time to steam fresh green beans followed by a quick saute.
Simple Sauteed Green Beans Inspired by Boston Market
1 bag of frozen green beans, thawed
2 tablespoons of butter, ghee, bacon fat, lard, or olive oil (Note: use appropriate fat for your current protocol)
2 teaspoons dehydrated garlic or 2 cloves fresh
3/4 teaspoon of coarse ground pepper (omit AIP)
1/2 teaspoon of coarse salt
1. Heat frying pan over medium heat for 1 minute, add the butter or olive oil, heat for another 30 seconds, and add the green beans to the pan.
2. Toss the green beans with oil, butter, or lard, to coat the beans. Add garlic, salt, and pepper and toss again to incorporate.
3. Gently heat for 10 minutes, stirring often until green beans are heated through.
4. Keep warm over low heat or serve immediately. Note: if making for a crowd, heat in batches and keep warm in a roaster oven.

This recipe is so simple and yet so good. It’s amazing how just a bit of garlic, along with salt and pepper and butter….sauteed to the consistency you like just brings out the wonderful taste of the green beans themselves. Such a good recipe. And it makes you want to eat a LOT of vegetables which is not at all a bad thing! 🙂
