Vegetables are such an important part of our diet and most people don’t eat nearly enough. Vegetables are loaded with important vitamins, minerals, polyphenols, phytochemicals, and fiber. Broccoli is a cruciferous vegetable and it is especially beneficial—like medicine. Making cruciferous vegetables a regular part of your weekly diet is important because they are loaded with antioxidants, clear estrogen from your body (important for preventing estrogen-based cancers), and open up detoxification pathways (important for clearing heavy metals). Admittedly, I don’t eat enough broccoli. In an effort to up my game, I’ll be making this soup on a regular basis. Cauliflower is also a cruciferous vegetable. It has many of the same nutritional qualities as broccoli and it adds a creamy feel to soup without adding dairy.
Delicious and Detoxifying Broccoli Soup
1 lb of broccoli florets
1/2 lb of cauliflower florets
1 small carrot, sliced
1 medium onion, diced
3 cloves of garlic, peeled
6 cups of chicken broth or homemade chicken stock
3 tablespoons of olive oil
salt
pepper (omit for AIP)
(optional garnishes, please use care for the appropriate diet protocol) lemon-garlic gremolata, pumpkin seeds, swirl of olive oil, bacon crumbles, or croutons.
1) Prep and chop all the vegetables.

2) Heat pot briefly and then add olive oil. After 1 minute add the onions and carrots. Simmer for 3 minutes.

3) Add broccoli, garlic, cauliflower, and 6 cups of chicken broth. Cover and simmer for 20 minutes.

4) Blend to your favorite consistency using a hand blender or counter-top blender. I used both. The hand blender did most of the work.

5) I wanted it a little bit creamier so I blended 2/3rds of the soup for just a few seconds in the Vitamix. (I think soup can get too creamy in a Vitamix—like baby food—so be careful).

6) Ladle into bowls. Serve with a small garnish to make it extra special like Lemon-Garlic Gremolata, pumpkin seeds, swirl of olive oil, bacon crumbles, or croutons. Of course, this is optional, and for everyday eating I might not bother. It just depends what I have on hand. I would definitely serve a garnish to guests.

this soup is a new favorite of mine. i love a simple soup – clean, healthy ingredients with great flavor. i did actually substitute the olive oil since i was out – i used ghee instead. tasted so yummy!! going to start adding this into our meal rotation.
Brandy that sounds like a great substitution. If you make the a regular part of your rotation your body will love it. Cruciferous vegetables are so good for us.
