When I first made this salad dressing ten years ago, my husband wasn’t fond of it. For those who are trying to transition their families to healthier recipes, I’d like to offer some hope and insight. I can now fast forward 10 years later from when I first started making a version of this recipe, and let you know my husband now likes this dressing. He now even eats slices of avocado in tacos and lettuce wraps. Healthy eating is a journey. Some phases go faster than others. I’ve persevered and so can you! It might take a bit longer than you wish but keep trying “transition recipes.”
Avocado-Cilantro Lime Dressing
1 avocado
1 cup mayonnaise – I use Primal Kitchen or Chosen Food avocado oil based or homemade mayonnaise 1/2 cup loosely packed cilantro leaves
1 or 2 cloves of garlic, pressed (depending on how garlicky you want it)
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
juice of 1 or 2 limes
1) Place all dressing ingredients in a blender or deep container to use with an immersion blender. Blend until smooth.
2) Toss lettuce with desired amount of dressing and top off the salad with desired toppings.

This is by far one of my favorite dressings! Such a simple recipe but packed with the perfect flavors to compliment a taco salad! This can even simply be enjoyed for dipping veggies with!
