Doing a Whole30 challenge brought sweet potatoes back into my life. I shunned all potatoes, fruit, and starchy vegetables for far too long. I put them in a “bad food” category. I’m recovered from that thinking. I now know that they are good for me in the proper quantity. They contain vitamin C, niacin, folate, thiamin, vitamin B-6, iron, magnesium, potassium, copper, and manganese. In addition, sweet potatoes feed your gut microbiome and provide fiber. I hope you enjoy these home fries as a side with eggs, salmon, or a substitute for croutons on a salad!
Spicy Sweet Potato Home Fries
1 large sweet potato (white or orange), 1/2 inch dice
1 tablespoon olive oil
1 teaspoon Dijon or yellow mustard (omit AIP)
1/4 teaspoon salt
1/4 teaspoon pepper (omit AIP)
1/4 teaspoon onion powder
1/4 teaspoon paprika (omit AIP)
1/4 teaspoon garlic powder
1/4 teaspoon dried parsley
1/8 teaspoon (or more) cayenne (omit AIP)
1. Heat oven to 400 degrees. Place diced sweet potato on a sheet pan covered with parchment paper and add all the ingredients to the potatoes. Mix with your hands and place in the oven. Flip the potatoes with a spatula in 12 minutes.

2. Cook for another 12 minutes and serve or place in a warm oven.
