Southwestern-Style Hamburger Soup

Leaving behind processed foods and embracing a more whole and real food diet can sometimes be a shock to the wallet. Why is it that food not good for us costs less? Why does eating healthy cost more? Hmm. I’ll have to save that for another day. The bottom line is that recipes using ground meat over more premium cuts saves money. This recipe is hearty, flavorful, and can either feed a crowd or be frozen for future meals. The most flavorful and nutritious version of this soup is made with homemade Beef Bone Stock. However, sometimes we need time-saving methods. Rest assured, you can still make a delicious and less laborious version using store bought beef broth with a few scoops of collagen.

Southwestern-Style Hamburger Soup
2 lbs hamburger
1 large onion, medium dice
2 cloves garlic, pressed
2 quarts of homemade beef bone broth, store bought, or combination
1 cup of celery, medium dice (about 2-3 stalks)
1 cup of diced carrots
1 large potato, diced
1 can of fire roasted diced tomatoes
1 bag of frozen cut green beans
1 can of fire roasted green chilies, or homemade
1 tablespoon of Mexican oregano
1 bay leaf
1 scoop of beef collagen for each cup of  store bought broth, optional
salt and pepper

1. Break up hamburger in small bite size pieces in a large pot and cook though until no longer pink.

 

2. Push hamburger off to the side and cook onions for 3 minutes and then add pressed garlic. Continue cooking for 1 minute and then add 2 quarts of beef broth (preferably homemade)

3. Add celery, carrots, and potatoes to the pot.

4. Add Mexican oregano, bay leaf, salt, and pepper. Simmer for 20 minutes or until the vegetables are tender.

 

5. Stir in a can of fire-roasted diced tomatoes and small can of green chilies.

 

6. Add green beans and simmer for 5 minutes or until heated through.

 

 

7. Optional: add a scoop of collagen for each cup of store bought broth.

 

 

8. Ladle up the soup for a nutritious breakfast, lunch, or dinner. Yes, breakfast too! Why not?

  • Grandma used to make hamburger soup but not southwestern style.
    Grandpa loved it in his thermos for lunch. A good hearty soup.

      • I do remember eating it. It had pretty much everything you used except the southwestern spicy things. She may have used peas instead of green beans.
        More likely she used what ever was in her pantry at the time.
