Steakhouse Purple Sweet Potato Wedges

Steakhouse Purple Sweet Potato Wedges are an easy weeknight side that goes with just about anything! I can pop these in a high-heat oven while I’m chopping up a salad and frying up some burgers or air frying some chicken thighs. Dinner can be on the table in 45 minutes making it a great weeknight option. I’ve substituted these for the boiled potatoes in my Steak Nicoise Salad with Cashew-Lime Vinaigrette. I make these just like I make my Roasted Curry Sweet Potato Wedges, but here I’ve used my Prime Rib Seasoning which is basically my “house” seasoning that I use for almost everything.

How to make Steakhouse Purple Sweet Potato Wedges

If you don’t already have a large jar of my Prime Rib Seasoning handy you’ll need to make a small batch:
1/2 teaspoon seasoned salt
1/8 teaspoon coarsely ground pepper
1/8 teaspoon dehydrated minced garlic
1 pinch of thyme
2 purple sweet potatoes, quartered
1 tablespoon olive oil

Note: You can substitute any kind of sweet potato or russet potato if you can’t find purple sweet potatoes. Did you know the orange sweet potatoes and the purple sweet potatoes each have different phytonutrients so it would be great if you could incorporate both in your diet for the variety.

Coat the potato wedges with olive oil, sprinkle with seasoning, and place cut side down on a parchment lined sheet pan in a 450 degree oven.

Roast for 25 to 30 minutes. If they are very large potatoes they may take longer.

Serve with Super Crispy Baked Chicken Thighs.

Serve with Pan-Seared Oven Finished Tri-Tip.

Ingredients
  

  • 1/2 teaspoon seasoned salt
  • 1/8 teaspoon ground pepper coarslwy ground
  • 1/8 teaspoons minced garlic dehydrated
  • 1 pinch thyme
  • 2 whole sweet potato quartered lengthwise
  • 1 tablespoons olive oil

Instructions
 

  • Scrub potatoes clean, dry with paper towel, and quarter lengthwise.
  • Coat the potato wedges with olive oil, sprinkle with seasoning, and place cut side down on a parchment lined sheet pan in a 450 degree oven.
  • Roast for 25 minutes. If they are very large potatoes they may take longer.

Notes

You can substitute any kind of sweet potato or even a russet potato if you can’t find purple sweet potatoes.
