  • 2 medium sweet potatoes
  • 2 tablespoons olive oil

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Preheat oven to 450 degrees. Quarter sweet potatoes b cutting them in half length-wise and then cutting them in half length-wise again.
  • Toss the sweet potato wedges in olive oil and arrange the wedges on a parchment paper lined sheet pan.
  • Sprinkle the potato wedges generously with the curry spice blend and place the wedges on one of the cut sides facing down. Roast for 30 minutes or until the wedges have a good amount of browning.
