Recently, friends invited my husband and I to a dinner party where the theme was “burgers.” Everyone was supposed to bring a burger condiment as well as a side dish or dessert. I decided to bring a bacon and onion relish. It was a huge hit! Oh, and the leftovers made an amazing omelette.
Bacon and Onion Relish (Perfect for a Burger Bar)
1 regular sized package of bacon (Note: be sure to use appropriate bacon for dietary protocols like AIP, Paleo, and Whole30)
4 medium to large onions
1. Fry the bacon in two or three batches in your largest frying pan. Set cooked bacon aside on paper towel.

2. Slice onions in 1/4 inch rings and cook in bacon fat over medium low heat for an hour or until deeply caramelized.

3. Crumble bacon and stir into the onions.

4. Serve warm or room temperature with burgers, chicken, pork chops, or eggs.
