No Added Sugar Carrot Cake Oatmeal
This no added sugar carrot cake oatmeal made with oats, spices, carrots, and raisins is a fiber-rich, naturally sweet breakfast. It's perfect for meal prep.

- 4 cups water
- 1 1/3 cups oatmeal
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger ground
- 1/4 teaspoon nutmeg
- 1/8 teaspoon cloves
- 1 cup carrot finely grated
- 3/4 cup raisins
- 1 cup almond milk or milk of choice (optional)
- 1/2 cup walnuts crushed (optional)
Bring water to a boil in a medium sized pot while gathering and measuring ingredients.
Add oats and spices to boiling water, reduce to low, stir, and let simmer on low for 5 minutes.
Stir in finely grated carrots and raisins and continue to simmer on low for another 5 minutes.
Remove from heat and let rest for a 2 minutes
Divide oatmeal between 3 or 4 bowls (depending on desired serving size)
Optionally, add 1/4 to 1/3 cup of almond milk (or milk of choice) to each serving and top with crushed walnuts, if desired.
