The Best Baked Sweet Potato Fries

It's the perfect blend of a russet and garnet potato—just slightly sweeter. They have a lower moisture content, and will get brown and crispy in the oven. For this reason, they make the best sweet potato fries.

Ingredients
  

  • 2 large sweet potatoes white, peeled and sliced into 3/4" x 3/4" batons
  • 1 tablespoons olive oil
  • salt to taste
  • pepper to taste

Instructions
 

  • Preheat oven to 435 degrees.
  • Peel and cut sweet potatoes into 3/4 inch x 3/4 inch batons.
  • Toss potato slices with olive oil and and spread in a single layer on a parchment lined sheet pan with space between each fry. Sprinkle with salt and pepper, if using. Don't overcrowd. Bake in two batches if necessary.
  • Bake 15 - 20 minutes until one side is nicely browned. Flip over over and bake another side for 15 - 20. minutes. Check on fries often because they can burn.
