Mom's Easy Meatloaf with Tomato Sauce Topping

Ingredients
  

  • 1 pound ground chuck (fine if a little over a pound)
  • 1/2 medium onion diced small
  • 1/3 cup breadcrumbs
  • salt and pepper to taste
  • 8 ounces tomato sauce (1 small can)

Instructions
 

  • Gather all of the ingredients ground Chuck, onion, breadcrumbs, egg, salt, pepper, and a mixing bowl. Preheat oven to 350F. Chop onion into a small dice.
  • Place all of the ingredients in a mixing bowl. Combine all of the ingredients (without over mixing) and form into an oval and place into a casserole dish that has a lid. Place in the oven without the lid for 35 to 45 minutes or until nicely browned.
  • Once the meatloaf is nicely browned, bake the meatloaf with the lid for another 15 minutes. Don't skip this step because it makes the meatloaf tender and moist.
  • Carefully scrape the ooze off the top, drain the grease, and if necessary use a paper towel to absorb any remaining fat. Pour tomato sauce over over the meatloaf, and cover.
  • Bake another 5 to 7 minutes with the lid to heat and set the sauce. Serve slices with a spoonful of sauce and your favorite sides.
